Preparation

Purchase olive mix at a local salad bar or, buy jars of olives and mix together.

Add celery, Golden Raisins and Sun Dried Tomatoes to the mixed olives.
Dressing
-
To make dressing: whisk together the next 6 ingredients (vinegar – garlic)

Toss the olive mixture with the dressing

Top with freshly ground pepper and lemon zest

Refrigerate, stirring occasionally to blend flavors

Use the olive mixture within 3- 4 days

Serve with assorted cheese and a crusty baguette or crackers

- 1 lb. mixed olives (Nicoise, Picholine, Greek Black, etc.)
- 2 ribs of celery, sliced medium-thin
- ¼ cup California Dried Golden Raisins
- ½ cup fruiton’s® Seasoned Sun Dried Tomatoes
- 1 T red wine vinegar
- ½ t sugar
- 1 t lemon juice
- ¼ cup olive oil
- 1 t oregano
- 1 clove garlic, minced
- freshly ground black pepper to taste
- zest of ½ lemon
