Preparation

  1. Purchase olive mix at a local salad bar or, buy jars of olives and mix together.

  2. Add celery, Golden Raisins and Sun Dried Tomatoes to the mixed olives.

Dressing

  1. To make dressing: whisk together the next 6 ingredients (vinegar – garlic)

  2. Toss the olive mixture with the dressing 

  3. Top with freshly ground pepper and lemon zest

  4. Refrigerate, stirring occasionally to blend flavors

  5. Use the olive mixture within 3- 4 days

  6. Serve with assorted cheese and a crusty baguette or crackers

Ingredients

  • 1 lb. mixed olives (Nicoise, Picholine, Greek Black, etc.)
  • 2 ribs of celery, sliced medium-thin
  • ¼ cup  California Dried Golden Raisins
  • ½ cup  fruiton’s® Seasoned Sun Dried Tomatoes
  • 1 T red wine vinegar
  • ½ t sugar
  • 1 t lemon juice
  • ¼ cup olive oil
  • 1 t oregano
  • 1 clove garlic, minced
  • freshly ground black pepper to taste
  • zest of ½ lemon
