Mixed Grains With Dried Cranberries

Serve hot as a side dish or cold as a salad

Preparation

  1. In a medium sized serving bowl, mix the rice, cranberries, pecans, and green onions together.

  2. Zest lemon over salad. 

  3. Add the olive oil, lemon juice and toss.

  4. Add feta and herbs. 

  5. Season with salt and freshly ground pepper.

Ingredients

  • 1- 8.5 oz. pkg. of par cooked Mixed grains ( ex. Seeds of Changes) cooked per package
  • ½ Tsp salt
  • ½ C Dried Sweet Cranberries
  • ½ C chopped pecans (toasted or un-toasted, your choice)
  • ¼ C sliced green onions
  • ½ C Feta Cheese
  • 1 Tbsp  fresh mint chopped
  • 1 Tbsp  of fresh parsley chopped
  • Juice from 1 lemon – (2 Tbsp)
  • 3 Tbsp  olive oil
  • 1 lemon zested
  • Salt and freshly ground pepper.
